The grill is one of my favorite modern day accessories, its right up there with Netflix and email. Yet I never use it...my husband does. Right about this time of the year when the weather gets warm and things turn green, it is suddenly grill season again! Oh grill season, how I enjoy you! My husband cooks, we have fun sides (often right from our garden) and everything is just a little more laid back. I make a glass of sweet tea and put some Alabama on the Sonos.
Soon after we got married we got a decent size grill and Trev decided to grill pizza. At first I was confused and with very little pizza background knowledge was a little skeptical. Needless to say my husband would give me a run for my money in the kitchen any day but on the grill...with pizza..no contest!
Pizza Dough Recipe
1 1/2 cups warm (115 degrees F) water
2 1/4 (or 1 packet ) of active dry yeast
2 tablespoons sugar
2 tablespoons salt
3 cups flour, I add flour until the dough has come together and is not sticky. You can use all purpose as well as self rising.
2 tablespoons olive oil
Directions
Put yeast in the bottom of your mixing bowl and pour the water on top. Allow to sit for five minutes. It should start to get bubbly, then add salt and sugar and mix with a bread hook. Start adding flour, about 1/2 cup at a time. I keep adding flour until the dough is not sticky. One way I can tell is if I light up the mixer and the dough slides easily off the bread hook. When the dough has come together and is not sticky add olive oil. Allow the dough to rise for 40 minutes but it can raise up to 90 minutes. Any unused dough can be kept in an air tight container in the fridge for around 4 to 5 days.
Grilling the pizza dough
Make sure your grill is cleaned before you start. Put your grill on high and heat to around 400 degrees. Right before you place the dough on the grill, rub the grates with a paper towel covered in olive oil to create a non-stick surface. Place the dough on the grates and keep a careful watch. Using metal tongs keep checking and rotating the dough so it does not burn. Most grills tend to not cook evenly, so it is important to move the dough around for even coverage. When the bottom side becomes done, which can be as crispy as you desire, flip it over.
Next start adding your toppings. We used our homemade marinara sauce, you can get the recipe from this post. Add whatever toppings you enjoy just make sure anything that needs cooking is done before being placed on the pizza. Cover and cook until the crust is done to your liking. Enjoy!
